
do you have a tried and tested simple recipe for blackberry jam?
There are blackberries everywhere at the moment, and I’m actually getting sick of blackberry crumble. so I’d thought I’d make some jam. I googled for a recipe, and found loads, but they are all quite different. Some of them require a jelly bag (something I don’t have). So I’d like one that someone knows is easy and doesn’t require specialist equipment.
It has to be vegan!

BLACKBERRY JAM
3 cups mashed or sieved blackberries
5 1/2 cups sugar – you can use vegan sugar
1 box powdered fruit pectin
1 cup water
Mix the berries and sugar in a bowl; let stand 20 minutes, stirring occasionally. Blend the pectin and water in a large saucepan; bring to boiling and boil rapidly 1 minute, stirring constantly. Remove from heat; add the berry-sugar mixture and stir about 2 minutes.
Ladle into clean hot jars, cover, and let stand 24-48 minutes, or until the jam is “set”. Store, tightly covered, in freezer. (Jam will keep several weeks in refrigerator.) Seven (1/2 pint) jars of jam.
