Why is lemon juice important in elderberry jelly?

Acidness? Every recipe I have looked up contain lemon juice.
Don’t elderberries have enough? They are very sour.

they are sour but are not acid. you need acid when making jelly and jam to kill the bacteria and help the food jell. see this site for more info.
