
Got any huckleberry recipes that you really like–pie, or something else?
I’ve got around 6 1/2 cups of freshly picked huckleberries (and a sore back from doing gymnasics trying to reach them). I’m sure that most recipes for blueberry pie, cobbler, jam or whatever would turn out OK if I added a little more sugar, but do you have a standout classic that you personally like to make with huckleberries that I should know about? I want to make the most of these–they took me a whole day to pick! Thank you very much in advance.
Huckleberry Pie
INGREDIENTS
1 recipe pastry for a 9 inch double crust pie
4 cups huckleberries
3/4 cup white sugar
1 tablespoon all-purpose flour
1 teaspoon grated lemon zest
2 tablespoons lemon juice
2 tablespoons butter
2 tablespoons heavy cream
2 teaspoons white sugar
DIRECTIONS
Preheat oven to 425 degrees F (220 degrees C).
Place huckleberries in pastry-lined pan. In a small bowl, mix together 3/4 cup sugar and flour. Spoon evenly over berries. Sprinkle lemon rind and lemon juice over top. Dot with butter. Cover with top crust. Seal edges and cut steam vents in top. Brush surface with cream, avoiding fluted edges of crust. Sprinkle with 2 teaspoons sugar.
Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 20 to 25 minutes, until crust is golden brown.
Huckleberry Muffins
INGREDIENTS
3/4 cup butter
1 cup white sugar
1 egg
3/4 cup milk
1 teaspoon vanilla extract
1 3/4 cups sifted all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup huckleberries
1 tablespoon all-purpose flour
DIRECTIONS
Preheat the oven to 400 degrees F (200 degrees C). Grease 15 muffin cups, or line with muffin papers.
In a large bowl, cream together the butter and sugar until smooth. Mix in the egg, milk and vanilla until well blended. Combine 1 3/4 cups flour, baking powder and salt; stir into the batter until just moistened. Toss huckleberries with remaining flour to coat, then fold them into the batter. Spoon batter into muffin cups, filling at least 2/3 full.
Bake for 15 minutes in the preheated oven, or until the tops spring back when lightly pressed.
Huckleberry Buckle
INGREDIENTS
1/4 cup butter
1/2 cup white sugar
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
2 1/2 cups huckleberries
3/4 cup white sugar
1/2 cup boiling water
1 tablespoon butter
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C.) Grease the bottom of a 9 inch square pan.
In a large bowl, cream 1/4 cup butter and 1/2 cup sugar. In a separate small bowl, combine flour, baking powder and salt. Stir into butter mixture. Stir in milk; mixture will be thick and lumpy. Spread batter into the prepared pan.
In a large bowl, combine berries, 3/4 cup sugar and 1/2 cup boiling water. Pour over the batter in the pan. Dot the top with remaining 1 tablespoon of butter.
Bake in the preheated oven for 45 to 50 minutes.
**All of these recipes add up to 7 1/2 cups of huckleberries. I tried to make it add up to 6 1/2, but just couldn’t get it to. Good luck, and enjoy those berries!
