
Making jam with pectin?
I want to try to make jam. I have five peaches and some powdered pectin. I looked up some Jam Recipes but they seem really complicated. I don’t even have any air-tight jars!! What is a really easy way to make jam using pectin that doesn’t involve the whole sterilizing-boiling jar method? Can I just cook down the fruit with some water and sugar and then throw in some pectin, stir it until it’s thick, then put it into a plastic container?
Is there any reason that traditional jam methods involve all that sterilizing and boiling nonsense? Is pectin potentially dangerous if not used the right way?
I have made jam the way you suggest. The trick is that it must be refrigerated and eaten within a month or so. The sterilization is so the jam keeps. Pectin in made from fruit and just shortens the time it takes the fruit to thicken. You do need to use sugar to help the pectin thicken. If you want to use artificial sweetener (spenda) you have to buy special pectin.
